Soil Clay-limestone, hillside position with large rounded stones
Location Terroir de Boutenac, at an altitude of 150-200 m, North-north-west facing
Culture Ecocert certification – organically grown grapes with no pesticides or herbicides. Wine made with organic grapes since 1991
Grape varietals 80% Carignan, 20% Mourvèdre. Carbonic maceration of the Carignan from the St Jean parcel of land, and the Mourvèdre from the La Tour vineyard, vinified together. Matured for 6 months in vats and for 2 years in bottle.

Tasting notes:

Eye Deep red with violet glints demonstrating that despite its youth, this Corbières Boutenac is ready to drink.
Nose Very concentrated with notes of blackberry, black pepper and liquorice. Subtle secondary aromas of thyme and fresh fig.
Palate L’Echappée Belle embodies the union of Carignan, the grape variety that grows so easily on our terroir, and the organic method of production. The wine, full-bodied, taut and crisp, really has its own personality, impossible to find elsewhere. The softness of the 2016 is more pronounced than in the 2015, and the balance and depth of flavour will carry this vintage into the 10 or fifteen years to come.

Tips on service Serve between 16° and 18°.
Food matching Quails with truffles, entrecôte steak, coq au vin, lamb en croûte with thyme. The chef Marc Schwab even suggests pairing with dark chocolate..
